Peaches and goat cheese create a savory and sweet complement to one another in this healthy barley salad. This flavorful side dish is packed with surprising bursts of flavor and is a great side dish or snack. For dinner, try pairing it with a piece of fish, whole-grain roll and a fresh salad.

Total Time: 30 minutes
Makes 8 servings
Serving Size: ½ cup
Nutrition Facts (per serving): Calories: 139; Total Fat: 4 g; Saturated Fat: 1 g; Sodium: 162 mg; Carbohydrate: 22 g; Fiber: 5 g; Protein: 4 g

Ingredients:

  • 1 cup quick-cooking barley
  • 1 cup parsley leaves, finely chopped
  • ¼ cup walnut pieces, chopped
  • 1 peach, peeled, pitted and diced
  • ½ cup red bell pepper, diced
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons lime juice (about 2 limes)
  • 1 orange, juiced
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ cup low-fat goat cheese, crumbled

Directions:

  1. Cook barley according to package directions, omitting salt.
  2. Drain remaining liquid from barley. Stir in parsley, walnuts, peach and pepper.
  3. In a small bowl, combine oil, lime juice, orange juice, chili powder and salt. Pour over barley mixture and toss together.
  4. Crumble goat cheese over top and serve.
