Peaches and goat cheese create a savory and sweet complement to one another in this healthy barley salad. This flavorful side dish is packed with surprising bursts of flavor and is a great side dish or snack. For dinner, try pairing it with a piece of fish, whole-grain roll and a fresh salad.

Ingredients:

1 cup quick-cooking barley
-
1 cup parsley leaves, finely chopped

¼ cup walnut pieces, chopped

1 peach, peeled, pitted and diced

½ cup red bell pepper, diced
-
1 tablespoon extra-virgin olive oil
-
2 tablespoons lime juice (about 2 limes)

1 orange, juiced
-
½ teaspoon chili powder
-
¼ teaspoon salt
-
¼ cup low-fat goat cheese, crumbled
Directions:

Cook barley according to package directions, omitting salt.

Drain remaining liquid from barley. Stir in parsley, walnuts, peach and pepper.

In a small bowl, combine oil, lime juice, orange juice, chili powder and salt. Pour over barley mixture and toss together.

Crumble goat cheese over top and serve.
